We have a mix of comfort foods, gluten-free treats and some still-thinking-of-summer entries. And pizza sliders. Yes. Thai Red Curry Coconut Shrimp and Sweet Potato Noodles Start the week off right with this mouth-watering shrimp bowl from Pook’s Pantry. Only 8 ingredients (minus salt and pepper) pack a ton of flavor as well as visual appeal into this gluten-free dinner. Hungry?
P.F. Chang’s Lettuce Wraps Who loves P.F. Chang’s lettuce wraps? Only everyone who has every tried them, that’s who. Made with a mix of turkey and pork and dressed with soy-ginger salt, these babies from Comfortably Domestic are a bit lighter than the originals, but every bit as flavorful. So be sure to double the recipe!
Mexican Green Goddess Pasta Salad I debated serving this up as an extra, but I decided that it’s hearty enough for a main course. As written, the recipe is meaty (it has fish sauce in the dressing), and you can up the meat quotient even further by adding poached chicken or even some nice canned tuna. Make it vegan by leaving out the fish sauce, and keep it vegetarian by adding in some shredded or crumbled cheese. The Green Goddess dressing is rich with avocado and bright with lime and herbs, a perfect complement to the beans, corns and other vegetables hiding beneath their pale green blanket. We love this salad, and I hope you will too.
Sheet Pan Chicken Thighs with Baby Artichokes and Carrots Thursday. We know you’re tired, and there’s still a Friday standing between you and the weekend. The Girl in the Little Red Kitchen comes to our rescue with an easy comfort meal. Grab a half sheet pan, arrange your chicken and vegetables, dress with some oil, salt, pepper, and lemon and roast away. While your meal takes care of itself, whip up the carrot top pesto, and you’ll be in for a real treat. If you can’t find carrots with the tops on, feel free to substitute the more traditional basil, or maybe a mix of basil and spinach. Yum!
Baked Pepperoni Pizza Sliders Pizza Night arrives with a fun twist, courtesy of The Chef Next Door. Slather pizza sauce on slider buns, add pepperoni, and mozzarella cheese, and put the tops on. Then take time to make a little magic in the form of a cheesy, buttery Italian-esque basting sauce you slather on before planting the whole deal into the oven for a short, 10-minute bake. Dinner is served!
Oh, Extras. How I love thee! This week, we get a lovely, summery vegetable side dish and a dessert.
Okra, Corn, and Tomato Salad This simple, colorful salad allows you to revel in the last vestiges of summer produce whenever you want it. Char some sweet corn and okra in a pan, toss that together with as many tomatoes as you can find, and dress it all simply with oil, vinegar and minimal seasonings to allow the produce to shine. Perfect hot or cold, so consider this as a lunchbox option any day of the week or a nice addition to your sheet pan meal. You can even pair it with the Mexican Green Goddess Pasta Salad and have salad night. Enjoy!
Gluten-Free Mini Pineapple Upside Down Cheesecakes I got to contribute a dessert this week. Yay! These little pineapple upside down guys live on coconut macaroon crusts, which are naturally gluten-free. And you get the added bonus of enjoying a pina colada in dessert form! Please note that while the whol slices of pineapple look nice, they were super hard to cut and eat. For that reason, the recipe is written to use crushed pineapple. I suffer so you won’t have to. You’re welcome.
