This week, we have lots of options for you: comfort food, grilling food, summer food, fall food. And booze. And ice cream! Get your shopping lists ready!
Okay, okay, I know it’s Labor Day and maybe you want to grill. If you do, check out Wednesday’s burger. If you’d rather have some serious southern comfort food, stick with this. Southern Chicken and Dumplings the way my best friend’s mom used to make them. If you’ve never had flat or “slick” dumplings, it’s time. Good for the stomach and the soul. To make this for a weeknight, cook the chicken in your pressure cooker or Instant Pot. You can even cook the chicken all day in a slow cooker and then all you’ll have to do before dinner is make and cook the dumplings.
Susan from The Girl in the Little Red Kitchen gives us a bright, beautiful, transitional and rhyme-y dish: Tomato Alfredo Pasta. I call it transitional because even though it’s full of summery tomatoes, it gets a comfort food treatment with some heavy cream. This one is ready in well under 30 minutes, so put this one into your Busy Weeknight Rotation for sure, especially while tomatoes are still in season!
Remember those burgers I mentioned earlier? Well, here they are! Frisco Melt Burgers from The Chef Next Door. Yes. Just feast your eyes. And then just feast. Two patties, 2 cheeses, 2 ingredients in the sauce, and 2 thick slices of Texas toast make for 1 phenomenal burger.
Look, y’all! A filling dinner salad from Pook’s Pantry: Arugula, Butternut & White Bean Salad with Maple Vinaigrette. Are you guys detecting a theme this week? Monday: meaty. Tuesday: vegetarian. Wednesday: meaty. Thursday: vegetarian! Roasted butternut squash, white beans and pops of dried cranberry all nestle into their bed of arugula and get dressed with a maple vinaigrette. Yes, fall is coming. So is winter, but that is another story. Make this.
Savory Oatmeal? Absolutely. If you’ve never had savory oats, you need to get on board, you guys with these Huevos Rancheros Savory Oats from Comfortably Domestic. I admit I wasn’t on the savory oatmeal train until I tried a vegan taco filling based on steel-cut oats. So good. Make room in your life for this breakfast-for-dinner recipe, friends. I mean, just look at it. And listen. It is calling to you!
Hooray for extras! This week: an adult beverage and an ice cream!
First up are my Top Shelf Margaritas. I am not kidding when I say top shelf. The best of everything, and homemade sour mix, to boot. As the kids say these days, Treat Yo’Self.
