It’s weekly meal plan time, hooray!
One of my favorite things to do (regarding this menu plan, anyway) is to look over everyone’s recipes and try to detect a theme.
This week, as many weeks as the weather gets cooler, is pretty much about comfort food, because who doesn’t want that?!
You Know You’re Hungry!
Here’s a very quick preview for you: super hearty and robust vegan creole white beans and pork carnitas enchiladas start us off. Two truly comforting dishes.
Cheryl anchors Wednesday with dreamy butternut squash risotto, and Kirsten teaches us how to make creamy onion soup on Thursday.
Friday is my cauliflower pizza crust pizza. The crust is flavorful and sturdy enough for picking up and folding, too.
And don’t miss our extras this week. Cheryl shows us how to make melting potatoes, which really do melt in your mouth. You might want to bookmark that one for Thanksgiving!
