Friends we have found ourselves in the heart of summer, and our weekly meal plan post aims to keep you cool.
This week we have a wonderful Chicken Greek Salad, a colorful orzo salad, a vegetarian chili that comes together so quickly your kitchen won’t have time to heat up, steak, onion, and tomato flatbreads, salad skewers and two great extras featuring blueberries! Shall we get started?
It’s Weekly Meal Plan Time!
Before we get to all the easy, family-friendly recipes, don’t forget to check out our menu plan archives where you’ll find every single recipe we’ve posted from the last two plus years! Enjoy!
Chicken Greek Salad
A great made from scratch salad--including the easy, flavorful dressing--that will keep your kitchen cool. You can cook the chicken yourself or use a rotisserie chicken if you prefer! Yum from Comfortably Domestic!
Easy Spicy Vegan Chickpea Chilli featuring Sabra
This chili is ready in about 30 minutes, and since it doesn't contain any meat, it won't slow you down. There's a vegan option too (which is as simple as not topping it with sour cream or yogurt.) Or top with your favorite vegan shredded cheese or vegan sour cream!
Grilled Steak Flatbread Pizza Recipe
These flatbreads from Erin at The Speckled Palate cook on the grill, so you don't have to turn on your stove. Cut them small for nibbles for a party or serve them in larger slices--or make "personal pizzas." You are in control!
Mediterranean Orzo Salad | Pook's Pantry Recipe Blog
I'm in love with Pook's Pantry's orzo salad! She has loaded this guy up with all the Mediterranean goodness. Everything gets dressed in a light and bright sherry vinaigrette. Cheryl encourages you to switch up the ingredients to suit your tastes, but if you're into huge Mediterranean flavor, you will want to make this exactly as written!
Antipasto Salad Skewers
Food on sticks is just fun. It's a rule! And these antipasto skewers are totally fun and delicious. As with the orzo salad, switch them up how you like!
Brown Butter Blueberry Buckle for #SummerDessertWeek
This coffee cake makes delicious use of fresh summer blueberries by shoving a ridiculous number of them into tender, brown sugar, brown butter muffin batter and then tops it all with a healthy layer of brown sugar streusel. Yeah.
Blueberry Cheesecake Popsicles
These little yogurt-based popsicles have a short ingredient list--and no added sugar--for an easy summer treat that you could even serve as a fun breakfast. Or dessert. Or a snack. Yum!
And there you have it friends, a fantastic lineup of weeknight recipes designed to streamline your summer cooking. We hope you enjoy!
