It’s weekly meal plan time friends! This week the Dinner Divas are excited to bring you quick and easy meal ideas for all your menu planning needs.
Notable this week are a pizza dough you can whip up and then customize however you want, cauliflower lasagna noodles, and an extremely sexy tart as one of our extras.
You ready? Get your shopping lists ready!
Chicken and Zucchini Enchiladas
Corn or flour tortillas wrapped around a flavorful filling of spiced chicken and zucchini (great for using up summertime zucchini, so keep this recipe in mind!) all drenched in a quick, homemade enchilada sauce. Yum from The Speckled Palate.
Sweet & Spicy Slow Cooker Chicken | Pook's Pantry Recipe Blog
Sweet and heat is an irresistible flavor combination for me, and add in "chicken" and "slow cooker" and I know I can get that combo with minimal effort on my part! And I know it'll be fantastic because Pook's Pantry says so, and she is amazing.
30 Minute Cornmeal Pizza Dough Recipe
Kirsten's pizza dough comes together in only 30 minutes. Then you can stretch and top it however you'd like. The recipe makes 2 large pizzas or 8 mini guys that everyone can customize. It also freezes well, PLUS you can use it for calzones or stromboli (or mini ones). What are you waiting for?!
Low Carb Lasagna with Cauliflower Noodles
The noodles take awhile to make, but you can make them on one day and hold them in the fridge for Lasagna Night. Delicious low-carb lasagna. Use my simple recipe for the ricotta layer and meat sauce layer, or use your favorites. But the noodles are great and turn a super carby food into one with substantially fewer carbs and calories (an added bonus)!
Strawberry Spritzer Recipe with Rosé Wine | Pook's Pantry Recipe Blog
Pook's Pantry has a wonderful spring and summertime-perfect Adult Beverage for us this week. Rosé and strawberries come together quickly with strawberry simple syrup and seltzer. Perfect!
Salted Caramel Chocolate Tart - Comfortably Domestic
Remember that tart I told you about at the beginning? Well, here it is! Kirsten has outdone herself with this beauty. She says to think of it as a Twix Pie. Okay, I will, as I happily munch away!
And there you have it. A weekly meal plan that we think your family will really enjoy.
Mix and match these recipes, make them on different days, or save them for another time, but do make them. We know you’ll enjoy every bite (and sip!)
Thank you for spending some time with The Dinner Divas this week. Take care, and have a lovely day.
