Okay, here's what's happening. I am trying to be a Responsible Adult and get all of our services for the new house set up and ready to go. Everything is going swimmingly--water? Check. Gas? Check. Electricity? Check.--until....dun, dun, duuuhhhnnnn: cable. Currently, we have our Hinternet and HDTV stuff through a certain cable company whose initials are TIME WARNER. I call to a)get our new service lined up and b)see about getting a little better deal since I had discovered that getting ... continue reading...
Cornbread: All I Need Is This Cast Iron Skillet
We are closing on our new house in 2 1/2 weeks. This means that I am in the process of packing up. And the question is always, "What can I live without for the next x-number of days?" In going through the kitchen, I'm pretty sure we don't need 36 wine glasses--until we move and unpack again, we can probably get by with two. Do we really need 40 plastic containers, or can we live with, say, five or six? Will I be doing so much frenzied baking over the next couple of weeks that I need both stand ... continue reading...
My Life Would Be So Much Easier If I Could Just Keep My Mouth Shut.
Back at the first restaurant I worked in, the chef wanted me to come up with a cheese biscuit as part of an asparagus side dish. We were already making buttermilk biscuits for another dish, so I asked if I could just add cheese to that recipe. Almost all of the biscuit recipes I found were exactly the same, not counting any ... continue reading...
Oh, Look What Has Come Around on the Guitar Again!
Yup, here we are: back again, talking about automaticity. Why, Jen?! Why must you beat this dead horse?! Well, it's not dead, yet, friends. Every time I go out into the Hinternet I am reminded of the sheer number of folks that are tentative in the kitchen. If you are one of those folks, please, please don't think that I think you are being silly. I know that you're not. I know this because I am not silly (much), and I have been a Tentative Cook, too. Like the awkward teenage stage, it's a stage ... continue reading...
Hazelnut Flan: Steeped in Mystery
Photo by Emotional Blogster licensed under a CC license One of the most versatile ingredients I can think of is dairy. It has a pretty neutral flavor and is rather Full of Fat. I appreciate that in an ingredient. Here's the thing about fat--it absorbs flavors readily. This is why they tell you to wrap your butter really well and not to store it next to the onions. Liquid dairy has butterfat floating around in it. Skim milk hardly has any, and I don't like it for baking anyway, but whole milk ... continue reading...
