Friends, it’s time for a round-up. I need to start back with my Ice Cream Tuesday posts, so for personal inspiration and also to inspire you, here are all the ice creams I created last year. You’ll find vegan ice cream, fruity ice cream, chocolatey ice cream. Ice cream with nuts, ice cream with marshmallow, ice cream made out of cookies. So many amazing ice creams for summer or for whenever the ice cream urge strikes!

A Collection of 20 Amazing Ice Creams for Summer!
**Spoiler Alert: there are WAY more than 20!
Simple, rich, delicious. Make it with either the dark or milk chocolate varieties. Smooth and creamy with wee bits of toffee and nuts from the candy bar.
2. Vegan Mexican Chocolate Ice Cream with Dulce de Leche Swirl
This vegan dulce de leche is worth the price of admission alone. It would make a perfect ice cream sauce by itself, but swirled into this coconut and avocado, deeply chocolatey base, it’s even more magical. Nuts are totally optional. Enjoy!
3. Triple Chocolate Coffee Peanut Gelato
There’s a whole lot going on in this ice cream, but all the elements go together perfectly. This is one seriously decadent treat!
4. Brownie Malt Sundae Ice Cream
If you’re a fan of malt, you’ll love the cool, creamy vanilla malt base. The fudge sauce swirled in is a bonus!
5. Buttermilk Mascarpone Stracciatella with Balsamic Strawberry Conserve
Tangy, creamy, smooth, sophisticated. Stracciatella sounds fancy, but it’s easy to do. You just drizzle in melted chocolate in a thin stream during the last minute of churning. Chocolate shards and threads are much easier to deal with and seem more a part of the ice cream as a whole than do big, honking chocolate chips. The balsamic strawberry conserve elevates the whole thing.
6. Fruit Dip Ice Cream with Roasted Summer Berries
My hands down favorite fruit dip is sour cream, brown sugar, a pinch of salt and vanilla. These elements come together in a lovely base accented with roasted summer berries. Roasting the berries allows water to evaporate and keeps you from having icy, hard berries mixed into your smooth ice cream.
7. English Trifle Ice Cream
Rich custard–basically vanilla pudding that I churned into ice cream–cake pieces soaked in sherry and raspberry jam. All the elements of my favorite trifle. Except frozen. This was an excellent plan indeed!
8. Maple Buttermilk Pecan Ice Cream
If you’re a butter pecan fan, you’ve found your new favorite. The buttermilk lends a bit of a tang and keeps the ice cream nice and light-feeling. And it’s hard to say no to maple candied pecans.
9. Ice Cream Tacos
Yes, I made my own taco shells, but you can also buy those waffle cone bowls, soften them in the oven for just a bit and then form your own taco shells. These were delicious and fun to eat.
10. Mexican Flan Ice Cream
I took a Mexican flan batter, churned it into ice cream and studded it with shards of caramelized sugar that melt into the ice cream. Yes.
11. Strawberry Cheesecake Key Lime Marshmallow Ice Cream
One of my prettiest and most delicious summertime ice creams. strawberry and lime are naturals together, and if you’re a marshmallow fan, you’ll be super happy. Plus, the graham crumble stays crunchy for days. This is a great ice cream!
12. Browned Butter Peach Buttermilk Ice Cream
Gorgeous. I love this one. Make it with perfectly ripe summer peaches, but if you can’t wait, get frozen. They’ll work beautifully too.
13. Strawberry Rose Kulfi with Pistachios (“Indian no-churn ice cream”)
Dense and creamy, strawberry perfumed with rose and studded with cheerful green pistachios. My love song to Indian ice cream.
14. Piña Colada Buttermilk Sherbet (no-churn)
Short ingredient list. Easy to make. What’s not to love?
15. Creamsicle Ice Cream with Sweet Carrot-Ginger Puree
Creamy vanilla orange ice cream swirled with intense carrot ginger puree. Sounds weird maybe, but the flavors work beautifully together. If you can’t get your kids to eat their veggies at dinner, sneak them in for dessert!
16. Lavender Creme Fraiche Ice Cream with Lemon Blueberry Curd
Summertime bliss. Seriously, this ice cream is divine. If you don’t like lavender, by all means leave it out. The creme fraiche and blueberry curd combo is a winner. And the blueberry curd alone begs to be spread on scones.
17. Green Tea Gelato with Blackberry-Peach Tea Swirl and Candied Pecans (signature ice cream for The Flying Frog Bed & Breakfast)
I loved making this ice cream for the lovely folks at The Flying Frog. I asked them about their favorite flavors, and here they are, together in one bowl. Fantastic!
18. Honeyed Pear and Walnut Ice Cream
This ice cream is mellow and sophisticated. Pear and walnuts usually live together in salads, but there is no rule they can’t live together in desserts. The pear butter is gorgeous!
19. Passion Fruit Ice Cream
This was one of my first ice creams, and to keep it creamy, I advise reducing the half and half on the stove. These days, I’d just go with cream, so you do whatever makes you happy. I found the passion fruit puree at our local Latino market in the freezer section. This is some good stuff right here. Also consider making it with mango puree. Yum!
20. Vegan Coconut Avocado Ice Cream with Strawberry Hibiscus Swirl and Candied Pistachios
Green and red ice cream?! Striking and sophisticated. And completely vegan. I love my coconut-avocado base. Swirl in any fruity swirl you desire.
21. Spiced Chocoflan Coffee Ice Cream
I made this ice cream from the remnants of a failed chocoflan experiment. Brownie and custard baked together. Then cut up into bits and churned into a coffee base. Sometimes I’m glad when I mess up, because then ideas like this one happen! Feel free to substitute brownie chunks.
22. Pumpkin Custard Coffee Pecan Swirl Ice Cream
Thanksgiving dessert buffet in ice cream form. This is everything you love about fall.
23. Cookie Milk Ice Cream (made with Speculoos cookies)
Cookies steeped in milk and then strained out, churned into a spiced base and studded with more cookies. All the cookies!
24. Vegan Curried Peanut Butter Fudge Ice Cream
The peanut and curry work really well in this ice cream. And yes to the vegan fudge sauce. Leave out the curry for a more traditional peanut butter and chocolate pairing.
25. Ginger Ale Stracciatella with Marcona Almonds
Fancy ice cream made with a fancy ginger beer. Marcona almonds got to play because they’re my favorite.
26. Crème Brûlée Stout Ice Cream
No mix-ins. No swirls. Just pure, creamy vanilla-beer ice cream. This one is lovely–complex, smooth and creamy.
27. Fennel Pollen Caraway Ice Cream
One of my most unusual ice creams, it was inspired by a conversation on twitter several years ago. Apparently fennel and caraway work well together, so I decided to see for myself. They were right. Sweet and sophisticated, and maybe not to everyone’s taste, but if you love that slightly licorice thing that caraway and fennel do, you’ll be in heaven.
