Pork Carnitas Enchiladas from The Speckled Palate. All I can say is wow. Carnitas is one of my favorite things ever. I am all over this amazing casserole!

Cajun Chicken Fettuccine Alfredo from Comfortably Domestic. I do not like seafood. The Beloved LOVES seafood. So when we go to a seafood restaurant, I go straight to the chicken pasta option. Cajun Chicken Fettuccine Alfredo would be my go-to at any seafood restaurant. And since it’s Kirsten’s recipe, I know it’s going to be a)easy to make, and b)delicious. Win! Maybe I’ll even make some seafood for The Beloved just so I can have this myself!

Cauliflower Pizza You Can Pick Up from me. For your low-carb people out there, which is sometimes me, I came up with this cauliflower pizza crust that is flavorful and also sturdy enough to pick up, to fold over to eat pretty much like a New York Slice, and that reheats the next day without falling apart. This recipe is a total win. –

Memphis-Style Barbecue Ribs from The Speckled Palate. Y’all. Again, Erin hits it out of the park with these ribs. Make these. Please.

Mediterranean Chicken Bowls (Meal Prep) from Pook’s Pantry. This has been an admittedly meat-heavy edition of our weekly meal plans. End the week on a bit of a lighter note with Cheryl’s gorgeous, healthy bowls filled with some chicken, a little bit of cheese, and a wealth of vegetables. As a bonus, since this is meal prep, you can even get a start on the following week’s lunches or dinners!

Everything But the Kitchen Sink Cookies from Comfortably Domestic. This is everything a cookie should be. Sweet, salty, a little tang every once in awhile, crispy AND chewy. Lord.

The Best Little Debbie Oatmeal Cream Pie Copycat Recipe from me. If you are a fan of a Little Debbie Oatmeal Cream Pie but cannot deal with that weird chemical burn in your mouth after eating one, try these. They are truly dead ringers, minus the burn. Enjoy!

About Me!

For years, I was a fearful cook and baker--like sweaty-neck fearful.

After years of reading cookbooks, watching cooking and baking shows, and experimenting in the kitchen, I left a 16-year special education career to attend culinary school. I landed in a wonderful fine dining restaurant in Winter Park, Florida, where everyone was fearless, playing with their food on a daily basis. It was always, "I wonder what would happen if we..." and then we'd try it and find out. By the time chef handed me a 6th pan of horseradish broth and asked me to turn it into a sorbet for an appetizer, I knew my fearful days were totally behind me!

I started this site to help people overcome kitchen anxiety and paralysis through teaching basic pastry methods and techniques necessary to be able to bake and cook with confidence. Over the years, I have added hundreds of recipes to complement my technique posts. Please use this site as the resource I have built it to be, and feel free to contact me anytime.
