Welcome, friends, to the Dinner Divas Weekly Meal Plan post for Week 38. Actually, we sort of skipped right over Week 37. Oops. But we’re back now, and ready to warm you up during these cold January days.
This week we have two kinds of beef, 2 soups, a breakfast-for-dinner, and our extras. This week, delicious cinnamon rolls and a savory briny smackerel.

Red Wine Pot Roast with Mushrooms from The Chef Next Door. A symphony of flavors here: rosemary, Cabernet Sauvignon, rosemary, and mushrooms. Throw it together and let the oven do all the work. This is how you win dinner, any night of the week.
Porcini Crusted Beef Tenderloin with Chestnut Stuffing from Pook’s Pantry. An easy but elegant meal. A generous dusting of powdered porcini powder upping the umami goodness of the meat. Doesn’t get much better, friends.
Minestrone Vegetable Soup from Comfortably Domestic. With vegetarian and vegan options, this soup will keep everyone warm and cozy. Vegetables plus beans plus pasta equals Soup Jackpot. Soup math!
Hawaiian Roll French Toast Muffins from me. This is my breakfast for dinner offering since I’m still convalescing and in need of comfort food. Baked French Toast in muffin form with streusel and apple cider syrup (or regular syrup). These are so good, you guys.
Curried Tomato Lentil Soup from Girl in the Little Red Kitchen. Tomatoes, of course, plus carrots for sweetness, lentils for protein and chew, and Madras curry powder, because almost everything is better curried. Another lovely soup from Susan to put in your rotation!
Salted Caramel Apple Cinnamon Rolls from The Chef Next Door. I really don’t think these guys need any explanation or elaboration. I mean seriously. Look at them!
Easy Spanish-Style Marinated Olives from Pook’s Pantry. Start with your favorite olives (and Cheryl lists her faves), add some spice, some citrus and a lot of garlic, and you are good to go for snacking in front of the TV or for entertaining friends. Or for bringing with you as a hostess gift.
