Yes, friends, the Dinner Divas are back with our weekly meal plan for you. Looking over all these recipes, it’s apparent we are all in Full-On fall mode. And ice cream sauce mode, but isn’t that year round? This week, we have a vegetarian (or vegan) pureed soup, pulled pork, an easy lamb stew, chicken wings (and wait until you see them!), a comforting pasta bake and our extras: an autumnal panzanella and the aforementioned ice cream sauce! And just in case, here’re the archives so you can find all the recipes in one place.
Pureed Winter Vegetable Soup from Pook’s Pantry. If this doesn’t warm you up for the week ahead, I don’t know what will. Potato based with onions, celery, carrot, parsnip and artful seasoning. My sissy knows what she is doing And look at that diced veggie garnish! She says you don’t have to, but all you do is toss them in oil and seasoning and roast them for awhile. Do it while the soup is cooking. Dinner: schmancy and done.
Slow Cooker BBQ Pulled Pork from Comfortably Domestic. What do you do when you want slow cooked barbecue but you don’t want to bust out the barbecue pit? You break out your slow cooker. What you end up with is mellow pulled pork bathed in sauce and then topped with a quick and zippy slaw. Yup.
Ballymaloe Irish Stew for Two (or Four) from me. The Ballymaloe is a schmancy inn and cooking school in Ireland. I’ve never been there, but I know how to make their stew! Lots of lamb stew relies on a ton of ingredients, but this one has only 8 (not including salt and pepper). With a lean ingredient list like this, the lamb really shines. The presentation is really pretty too. This recipe makes about 4 cups, so if you’re super hungry, it will feed 2. If not, expect to get four servings. Enjoy!
Kung Pao Chicken Wings from The Girl in the Little Red Kitchen. These wings, y’all. I really don’t have much to say other than get out of my way, because I’m making these! I mean, really. Kung Pao. And now I’m going there. I apologize in advance: Kung Wow!
Sausage and Spaghetti Bake from The Chef Next Door. It’s Friday. You have earned this meal. Like a quick lasagna made with spaghetti, Italian sausage, and three kinds of cheese (!), you can put this together and the refrigerate it for a couple of days before baking. Nice. Also, yum.
Autumn Panzanella Salad from The Girl in the Little Red Kitchen. I love a good bread salad. Even summery panzanellas are comforting. But Susan combines comfort with lots of nutritious ingredients and knocks this guy out of the park. Butternut squash, Brussels sprouts, rainbow beets and Tuscan kale all tossed together with dried cranberries and pepitas in a simple, tangy vinaigrette. Your baguette never had it so good!
The Best Quick Hot Fudge Sauce from me. I have a seriously amazing hot fudge sauce on the blog, but even I know it takes longer to make than one who is really jonesing for ice cream with hot fudge sauce has to spend. So I came up with this guy. With a prep + cook time of about 10 minutes, you’ll be in ice cream sundae heaven before you know it. I use a couple of sneaky ingredients that make it taste like it took a really long time to make, but you don’t have to tell anybody that.
