First up, from Comfortably Domestic, we have this 30-Minute meal of Lemon Butter Chicken. The name alone makes me want it. With rice, please.
Chings, Junior Style is one of my favorite foods from a little “Florida-Mex” place in Cocoa Beach Florida. You can make them the way the recipe is written for a leisurely cooking process, or you can combine all the chicken and “tinga” ingredients in your slow cooker and just walk away. When you come back all you’ll have to do is roll them up and give them a quick fry, or a bake if you’d rather. Pure comfort!
What’s better than a rice bowl? Specifically, this one from The Girl in the Little Red Kitchen? Asian Rice Bowls with Honey Soy Pork Tenderloin speaks of comfort to me. Plus I love to eat with chopsticks. I’m not very good at it, so it forces me to slow down and enjoy every bite. Yum!
Take a delicious, sizzling restaurant dish and mix it up with some pasta? Well, that sounds like an excellent plan! Sarah from The Chef Next Door certainly thought so when she came up with this Chicken Fajita Pasta! This fresh and flavorful recipe relies on frozen vegetables and ready-cut chicken strips to get a home-cooked meal on the table quickly. Your family will thank you.
Cheryl from Pook’s Pantry knows what is necessary on a chilly Friday night. Turkey Chili. A short ingredient list (10, not counting salt and pepper) is big on flavor. What could be better for a weekend meal?
Our first extra this week is courtesy of Pook’s Pantry. Blueberry Swirl No Bake Cheesecake Bars. Would you just look at them?! And listen. They are certainly calling your name. I love the twist of a chocolate crust, because chocolate is always welcome. If you’re feeling more traditional, go with a graham cracker crust or a shortbread crust. Or lemon. But make these. I mean, seriously.
Our second extra this week is perfect for breakfast, lunchbox, coffee break, or dessert. Apple Pie Angel Biscuits from Comfortably Domestic. If there’s anything Kirsten knows, it’s pie and biscuits. So yeah, get right on this one, please.
