Hello, my friends, and welcome to Week 19 of the Dinner Divas Weekly Meal Plan posts. This week, we are full to brimming with summer goodness. Plus a great burger, some crispy chicken strips I can’t wait to sink my teeth into, and a cookie and an Adult Beverage for extras!

Caprese Tart with Olive Oil Crust: Susan from The Girl in the Little Red Kitchen really brings it this week (she is responsible for the Adult Beverage as well) with this beautiful tart featuring late summer tomatoes, mounds of cheese, and pesto. This is one stylish meatless Monday option, you guys!
Smoky Bacon Bison Burgers: This is an oldie but a goody from me. Lean bison mixed with finely minced raw bacon and onion for smoky, juicy goodness plus heart healthy bison. And a semi-homemade super umami ketchup you can make with only 3 ingredients. Use some of those summer tomatoes and lettuce for toppings, too.
Stuffed Summer Tomatoes: Stuffed tomatoes! Effortlessly elegant for a fancy dinner party or just for Wednesday. And Cheryl from Pook’s Pantry gives us two stuffing options: one with orzo, feta, and kalamata olives, and the other a seafood version with crab and herbed breadcrumbs. That’s right: two for the price of one!
Coconut Chicken Tenders: What could be more homey, comforting, and family-friendly than chicken tenders with yummy dipping sauce? I mean, I fancy myself pretty cultured and with a well-developed palate, but dang, y’all. Chicken tenders are sometimes the only thing that will do, am I right? Kirsten from Comfortably Domestic based her recipe on the coconut shrimp from Outback, except with chicken. And with grapefruit marmalade sauce for dipping. Yup.
The Best Creamy Macaroni and Cheese Ever: I’ve brought you another comfort food in the form of some stupidly creamy and tasty macaroni and cheese. The ingredient list is long, but most are pantry staples like dry mustard powder, onion powder, etc. And the cheeses: cream cheese, extra sharp cheddar, Colby jack, and Parmesan. Oh and sour cream. I said it was comforting. I never said it was low-calorie. Make this and eat small portions. You’ll be so glad you did. Happy Friday!
Hooray, it’s time for the extras! This week–cookies and booze!
Soft Chocolate Chip Cookies: If you love a chewy, soft chocolate chip cookie, you’re going to want to take Kirsten’s recipe for a spin. As a mom of four boys, she has to be on top of her cookie game, and she is. Just look at these little guys. Kinda makes you hungry, right? Tuck one into your kiddos’ lunch boxes or save them to enjoy quietly after the kids are off to school. I won’t tell them if you don’t!
Peach Pimm’s: First of all, please just admire this photograph. Wow, right? Susan from The Girl in the Little Red Kitchen has summered up an already summery British cocktail, the Pimm’s Cup, with juicy, ripe summer peaches. As refreshing as that photo looks, I know you’re wondering if it tastes as refreshing. Only one way to find out. Make the most of your peach haul from the farmer’s market or grocery by making yourself a glass or three this week.
