Hello! Welcome to the Dinner Divas Weekly Meal Plan, Week 17! For the time being, we’re leaving the theme weeks behind and focusing on easy, fast, tasty recipes you can easily prepare on a weeknight. This week, we have 1 vegetarian main, four meaty mains, and a gorgeous ice cream and sparkly muffins for our extras. Get your shopping lists ready!

Comfortably Domestic’s Summer Vegetable Gratin is the perfect comforting way to enjoy your vegetables. Summer’s bounty braised together in a light, dairy-based cheddar cheese sauce. The perfect summer meal, and you can absolutely swap this for the steak on Monday because it’s meatless!
Look you guys! It’s Wednesday already! I am bringing these tasty Spicy Chicken Guacamole Sliders to the party. You could of course also make sandwiches, but sliders are so much fun. Marinated, sauteed chicken, spicy guacamole, red onion, and cheese. Yes, indeed.
Y’all. The Girl in the Little Red Kitchen knows how to make me hungry! These sweet and sour Pork and Apricot Kabobs are make-ahead, so all you have to do at dinner time is grill them, either outside or in your grill pan. This is just a lovely meal, you guys.
The Chef Next Door brings us these vibrant and tasty Mexican Stuffed Peppers for Friday dinner. Rather than using green bell peppers, which can be a bit strong, she uses brightly colored, fully ripe peppers that lend sweetness and don’t overpower the ground turkey and rice filling. Yes please.
You guys must know by now how much I love my extras! And this week, we have a sophisticated ice cream and some sparkly muffins!
First up, The Girl in the Little Red Kitchen brings us grown up strawberry ice cream in the form of this sexy Roasted Strawberry Balsamic Basil Ice Cream. As far as I’m concerned, this is a Perfect Ice Cream.
Last up, these Sparkly Double Cinnamon Raisin Muffins from my very own blog are pretty to look at, but they’re also wonderful with a cup of tea or coffee for breakfast, a midday or mid-afternoon break, or tucked into a lunchbox. Double cinnamon from ground cinnamon plus cinnamon chips, and tons of plump, golden raisins. So good!
