It’s Friday, and you know what that means, right? It’s time for another edition–our 11th–of Dinner Divas’ Weekly Meal Plan! Last week, we had our first theme week: “Grilled.” This week, our theme is Red, White, & Blue, and I think you’ll really enjoy it. Start off the holiday week with homemade condiments! Kirsten of Comfortably Domestic brings us recipes for Caramelized Onions, Pepper Relish, Sauteed Mushrooms, and Avocado & Corn Salsa. Sure to dress up any meat or even veggie burgers. Yay!
I made this Tortellini Caprese Salad with basil hummus. It’s red and white and festive and tasty. Feel free to add some shredded rotisserie chicken to make this a dinner pasta salad.
Blueberries are often associated with dessert, but don’t count them out in savory dishes. Susan from The Girl in the Little Red Kitchen puts them to work in this gorgeous Barbecue Chicken with Pinot Noir Blueberry Sauce. Oh, yeah.
I’m loving The Chef Next Door’s (the other Susan) Heirloom Tomato Pesto Pizza. Perfect as a vegetarian pie, but add some prosciutto or ham to make it meaty. Either way, it’s hard to say no to heirloom tomatoes, fresh mozzarella, and pesto. Yum.
More veggie goodness for Friday night, guys. If you love eggplant, you’ll love how Pook’s Pantry shows it off in these Caprese Eggplant Stacks. So much flavor here with the homemade pesto, sundried tomatoes, fresh mozzarella, and garden tomatoes. Oh, my!
Extras might be my favorite category because it’s always a wild card! This week, we have a popsicle (dessert, breakfast, snack, movie food–whatever!) and a delicious potato salad–and I can never have too many recipes for potato salad!
First up, Pook’s Pantry brings the refreshment with Fresh Fruit and Coconut Yogurt Popsicles. Five ingredients, a bit of time in the freezer, and you are in frozen dessert heaven.
Comfortably Domestic’s Dill Potato Salad is what I need this summer. Creamy potatoes, bacon, egg, and dill all folded together with a low-fat yogurt base, so I can feel virtuous as I shovel it into my mouth. Yeah, you need this too.
