It’s Friday, and the Dinner Divas are back with a weekly meal plan for you. Lucky Week 7, and lucky you guys. What’s on the menu? A bit of everything from a meaty dinner salad to shrimp, to a vegan flatbread, to some wonderful chicken bowls you can have at either lunch or dinner to a chicken gyro. The extras this week include a savory-sweet side as well as gorgeous summery cupcakes. What a wonderful line up!

These Mediterranean Chicken Bowls from Cheryl of Pook’s Pantry are great for assembling on Sundays and having a lunch or dinner ready for several days. Savory chicken, earthy chickpeas, sharp, briny olives, creamy cheese and more make a delicious combination of flavors and textures. It’s a good thing this recipe makes a lot, because you’ll want this more than once!
Tuesday takes us to Greece with lemony-herbal chicken tucked into warm pita and slathered with cool, garlicky tzatziki sauce. You’re going to really enjoy these Grilled Chicken Gyros from Kirsten of Comfortably Domestic. And if you don’t feel like having chicken 2 nights in a row, make these for Wednesday. Easy! Oh, and you’ll also love Kirsten’s story of how she came to first try these sandwiches. I guarantee it’ll make you smile.
Go vegan in one of the most delicious ways possible with my Shortcut Armenian Vegan Lamajoun. Traditionally made with a paste of spiced meat and vegetables spread on thin rounds of bread dough, my shortcut version is based on spicy hummus and chickpeas, and flour tortillas stand in for the bread. Very easy to make with a food processor and a hot skillet and oven, this recipe makes 10 rounds, and they reheat beautifully.
Thursday brings us meat and potatoes, salad style with Susan’s from The Girl in the Little Red Kitchen Steak and Potato Salad with Avocado, Corn, and Tomatoes. Serve this plate of comfort warm or cold. Either way, you’re going to love the flavorful citrus-basil vinaigrette it’s tossed with. Make this on a sheet pan or, if the weather is beautiful, cook everything on the grill. Another big meal that will score you leftovers for lunch the next day.
Round out your weeknight meals with The Chef Next Door. Sarah brings us Shrimp Scampi with Linguine that comes together quickly enough to belong on a weeknight menu but can also be served as fancier fare for a party. Put on the pasta to boil, and the shrimp will be ready in the time it takes to cook the linguine. Yup–this meal can be on the table in well under 30 minutes. That way, you can get on with movie night.
The first of this week’s extras is this Roasted Curried Cauliflower with Golden Raisins and Ginger from Cheryl of Pook’s Pantry. This is a simple yet sophisticated side that would work especially well with the lahmajoun, or as a side for the gyros meal. Keep this one in your back pocket, though. Serving this even alongside a rotisserie chicken elevates the whole meal, and with only 7 ingredients (8 if you include the optional pine nuts) and a trip through the oven on a sheet pan, this is a really easy one to prepare.
For dessert, Kirsten from Comfortably Domestic went all out with these lovely, summery cupcakes. Strawberry Lemonade Cupcakes combine lemony cupcakes with fresh strawberry buttercream. I cannot imagine a more welcome bite at the end of a meal.
