My, how time flies! We’re already on our Weekly Meal Plan Week Six! This week, we have a great lineup for you. Some meat, a bit of seafood, chicken and a fried green tomato “burger.” Our extras this week are both desserts–hooray! A refreshing, no-churn mint chip ice cream and glorious bourbon blackberry jam bars. Nice!

Talk about a retro-fabulous meal, you guys! Susan from Girl in the Little Red Kitchen has made these Green Goddess Shrimp Rolls for us. You’ll feel like you’re at the beach in the 70’s, and I mean that in the best possible way. Over the years, Green Goddess has gotten a bad rap, but at its best, it is bursting with lemony, herbal goodness. Susan knows what’s up! Bonus? Minimal prep time. Huzzah!
Looking for an alternative to a veggie burger? Try my fried green tomato burgers! Kinda fancy with goat cheese and balsamic vinegar, but easy to make. Tart/crunchy/hot fried green tomatoes with creamy goat cheese and sweet/sharp balsamic is a great combo for good reason. Add some mixed greens to make you feel extra righteous! Oh, and no deep frying required. Just pan-fry these guys in about 1/2″ of oil. Yum.
You’ve had your veggie burger and all your herbs in the Green Goddess dressing. Now it’s time for a Seriously Meaty Burger. Kirsten from Comfortably Domestic has major burger game. Her Cowboy Tumbleweed Burger is a case in point. The burger is a mix of beef and chorizo, and this bad boy is topped off with caramelized onions, cheddar, bacon and pickled jalapenos. Yes, indeed. Thursday never had it so good!
We are definitely rocking a bit of a retro vibe this week. But retro can be fabulous when done right. Check out Pook’s Pantry Cheryl’s take on chicken fingers and potato salad. This is no ordinary diner fare, my friends. What we have here is Pimento Cheese Potato Salad with Fried Chicken Tenders on Potato Biscuits. With a side of spicy honey, thank you very much. Who needs pizza night when you can have this? Or play hooky on a Friday and make it a picnic!
This was my first foray into the world of no-churn ice cream, and it is so delicious, so easy to make, and so easy to make different variations, that I’ve never looked back. You are going to dig this Andes Mint Chip No-Churn Ice Cream any night of the week.
Dessert Number Two comes from Susan from The Girl in the Little Red Kitchen, and I want to eat these every single day. Who wouldn’t? I mean: Bourbon Blackberry Jam Bars look and sound fantastic. Another bonus is that they are easy to make–lovely shortbread pastry topped with blackberry jam from the store that you spike with bourbon and then top with ripe, juicy blackberries. Perfection!
