Week Five, you guys. Loving this weekly meal plan! Not only does it hopefully inspire you all, but I get inspired too when I see what all my friends are offering. This week, starts off vegetarian for a few days and then slides into meaty goodness on Thursday and Friday. Our extras are two versions of cheesecake! One is for no-bake blueberry lemon cheesecake parfaits and the other is for a beautiful, traditional cheesecake with shortbread crust. Hope you’re hungry!
Susan from The Girl in the Little Red Kitchen kicks off the week with the very essence of springtime: Pasta with Asparagus and Ramp Pesto. I know, right? Totally on my list. Can’t find ramps? Try using leeks instead.
I love a good veggie burger, and Susan from The Wimpy Vegetarian has Brought It with her Crispy Mexican Black Bean Burgers. This is definitely the burger for you if you think black bean burgers are too soft. Texture is really important to Susan, so she worked hard to make sure this burger delivers in both the flavor and texture departments. Yes, please!
Just take a moment to look at these beauties. Don’t they make you hungry? Sarah from The Chef Next Door kills it with these Healthy Loaded Sweet Potatoes with kale, pecans, cranberries and feta. Want to add some meat? A little bit of ground lamb or some bacon would go nicely as well. Yes.
Look! Some more burgers! But this time, sliders. Sliders are great when either a)you don’t want to eat a whole full-sized burger or b)you think eating 3 whole full-sized burger is a bit egregious! Either way, Kirsten keeps things a bit on the healthy side with her Greek Turkey Sliders. Tons of flavor in the burgers, and a gorgeous feta sauce to Accessorize. Happy Thursday!
Happy Friday, brought to you by me! This Low-Carb Cajun Style Sausage with Cauliflower Rice is pretty awesome, if I do say so myself. Sausage and Peppers in a sneakily creamy sauce made with pureed cauliflower, plus cauliflower rice. I have become a true cauliflower rice fan. If you haven’t tried it, do give it a whirl. Good stuff! If you’re an andouille fan, you’re gonna love this one.
Hooray for extras, especially when they’re desserts! First up, Sarah’s smooth, refreshing, and creamy Lemon Cheesecake with Shortbread Crust. The lemon lightens it making it a nice option for a warm weather dessert, especially if you’ve had a lighter entree. Say like those stuffed sweet potatoes. Or those sliders. Or that pasta…
Last but not least, Cheryl from Pook’s Pantry brings some individual desserts, which are always fun and special since you don’t have to share! No-Bake Blueberry Lemon Cheesecake Parfaits are pretty…parfait! And here’s a secret–they’re pretty low-carb and lower in sugar, so a delicious treat without any guilt. Sweet! And lemony and blueberry-y. Plus, Cheryl made a great how-to video to show you just how she puts these together. Excellent!
