The Biscuit Method
The biscuit method, also called the pastry method, is based on cutting or rubbing in cold fat into flour and some seasonings, then very lightly mixing with wet ingredients.
In a nutshell, here's how it goes:
- Whisk together dry ingredients.
- Cut in cold fat.
- Add enough liquid to form a dough.
It sounds pretty straightforward, but there are a fair number of rules to remember.
