I had The Cooking Channel on in the background today, and my head snapped around when Julia Child, in an episode of The French Chef, told me that she was going to fry eggs in olive oil. I began to salivate.
She made them, and they spluttered and puffed up and generally were Impressive in the pan, so I just had to try it for myself. Maybe not the health food I have promised to start sharing more of, but they are real food, made with real ingredients, and as a treat now and then, why not? Balance, right?

Yes, next time I will for-real poach them. The flavor is great, and crispy is good in some applications, but I think the oil would just enhance the smooth yumminess of the soft egg white from a poached egg. Now I’m drooling, too! 🙂
